On June 7, 2026, 16:58 Society Specialists from the Rospotrebnadzor office in the Nizhny Novgorod region reminded residents of the region about the rules for the safe consumption of freshwater fish. The agency emphasized that despite all its beneficial properties, this product can pose a health risk. According to specialists, freshwater fish can contain parasites, heavy metals, and pathogenic microorganisms. To reduce risks, it is important to follow the requirements for processing and cooking the catch. Fresh fish is recommended to be cooked immediately after being caught. If this is not possible, it should be frozen. At a temperature of minus 40 degrees, parasites die within 7 hours, and at minus 35, within 14 hours. In a regular freezer at a temperature of minus 18 degrees, larvae are not destroyed until at least 20 days of continuous deep freezing. Before cooking, it is necessary to remove the entrails and gills, where parasites most often accumulate, and then thoroughly rinse the fish. Thermal processing should also be sufficient. Fish should be boiled for at least 15-20 minutes after the water has boiled. Pieces about 2 centimeters thick should be kept in hot oil for at least 15-20 minutes when frying. When salting, it is important to observe proportions and time. The salt content should be at least 6% of the fish's weight. Small fish should be kept for at least 14 days, medium fish for at least 21 days, and large fish for at least 40 days. The agency urges adherence to the rules of storage, cleaning, and cooking fish to avoid parasitic infections and not to jeopardize health.
