
Chef Kryukov commented on Milonov's proposal to ban mayonnaise.

State Duma deputy Vitaly Milonov called to limit the use of mayonnaise, comparing its harm to that of alcohol and tobacco. In his view, the abundance of this sauce in various dishes, to which Russians are accustomed, could lead to obesity in an entire generation.
Chef and member of the Association of Chefs of Russia Anatoly Kryukov told 360.ru in an interview that mayonnaise has long become an important ingredient in cooking, and its benefits or harms to health remain a matter of debate.
Kryukov emphasized that although he himself is not a fan of mayonnaise, its use in some dishes is inevitable. He noted that at present there are no scientific studies confirming the harm of mayonnaise.
"People who have consumed the product for many years have not suffered any ill effects," he added.
According to the chef, if it is necessary to make a dish healthier, mayonnaise can be replaced with thick sour cream or natural yogurt, to which spices can be added—lemon juice, vinegar, mustard, salt and sugar. The result will be a product similar to mayonnaise but with a lower content of fats and other harmful components.
However, homemade mayonnaise has a limited shelf life—only 2–3 hours, which makes its use inconvenient for chefs. Therefore they prefer to use commercial mayonnaise, which keeps longer and does not affect the quality of dishes.
