Nizhny Novgorod residents were reminded of the rules for the safe consumption of freshwater fish.
Specialists from the Rospotrebnadzor Administration for the Nizhny Novgorod Region warned residents about the risks associated with consuming freshwater fish and reminded them of the rules for its safe processing. The agency noted that although fish is a valuable product, it can contain parasites, heavy metals, and pathogenic microorganisms. Specialists recommend using fresh catch immediately. If the fish is to be frozen, it is necessary to adhere to the temperature regime: at -40 °C, parasites die within 7 hours, and at -35 °C — within 14 hours. In a standard household freezer (around -18 °C), fish should be kept for at least 20 days. Before cooking, it is essential to remove the entrails and gills from the fish, as parasites are most often localized there.
When cooking, fish should be boiled for at least 15–20 minutes after the water has boiled. Frying pieces about 2 centimeters thick is also recommended for a minimum of 15–20 minutes in hot oil. Special attention was given by Rospotrebnadzor to the rules of salting. The salt concentration should be at least 6% of the fish's weight. For reliable disinfection, small fish must be kept for at least 14 days, medium-sized fish for at least 21 days, and large specimens require brining for a minimum of 40 days.
