Chicken meat is one of the most popular products in the diet. It has high nutritional value and is suitable for both children and the elderly, as well as for those suffering from gastrointestinal diseases. Dietitian, Candidate of Medical Sciences Alla Polyashova spoke about its benefits and cooking rules at a press conference at "AIF-NN". A correspondent from NIA "Nizhny Novgorod" attended the event.
According to the expert, chicken belongs to dietary therapeutic and preventive foods. It contains on average 15–20 grams of protein per 100 grams, while being low in fat and almost completely free of carbohydrates.
"Chicken meat has little connective tissue, which makes it easier to digest. Therefore it is recommended for gastrointestinal pathologies when it is necessary to reduce the load on the digestive system," Polyashova explained.
Chicken protein contains important essential amino acids: valine, leucine, tryptophan, arginine, histidine and taurine. They promote muscle growth, improve sleep, support immunity and participate in liver function and metabolic processes. The mineral composition of chicken meat includes calcium, phosphorus, magnesium, iron, copper, zinc and selenium. Among the vitamins, the fat-soluble vitamins A and E are particularly valuable, as well as B-group vitamins.
"Chicken is beneficial for cardiovascular diseases, for improving memory and preventing Alzheimer's disease, as well as for obesity and for strengthening the musculoskeletal system. Taurine, for example, is included in all modern infant formula. And arginine and histidine are necessary for children's growth and the functioning of their genetic machinery," the dietitian emphasized.
Speaking about cooking methods, Polyashova recommended avoiding frying and always removing the skin, where harmful substances accumulate. Preference should be given to boiling, stewing, baking and making soups using secondary broth.
She noted that chicken goes well with most foods, including vegetables, fruits, compotes, berry drinks and herbal teas. The main thing is not to overeat and to ensure dietary variety.
Answering a question about diet for weight loss, Polyashova explained that white meat should be preferred. However, red meat (for example, the thigh) should not be completely excluded, especially in cases of hidden anemia.
"If a person is energetically depleted, and we also remove the source of iron, we will worsen the energy deficit. Therefore the emphasis is on white meat, but red meat should also be present in reasonable amounts," the expert added.
