The specialists from the Center for Hygiene and Epidemiology of the Nizhny Novgorod Region conducted a laboratory test of the shawarma. Read in NewsNN how safe street food is and how to avoid intestinal infections.
The shawarma sent for testing was purchased near Moscow Station in Nizhny Novgorod — from one of the kiosks. Microbiologist Anna Kruglova took samples to check for intestinal bacteria — staphylococcus and salmonella — as well as the total number of microorganisms.
"These indicators should be absent in normal conditions. If any microorganisms are present, the product is considered non-standard and not suitable for consumption," explained the specialist.

The laboratory analysis is conducted in stages: first, the material is placed in enrichment media, then in differential-diagnostic media. Only after this can the presence of pathogens be visually assessed.
Inspections of street food vendors in Nizhny Novgorod will continue. The results of laboratory tests of specific shawarma samples will be announced later.

Head expert of the Rospotrebnadzor department for the Nizhny Novgorod Region, Alena Dyakova, reminded that preparing food outdoors is permitted but strictly in compliance with sanitary requirements.
"Semi-finished products must be prepared in stationary cafes or restaurants. The kiosk where shawarma is prepared must be connected to water and sewage systems, and staff must observe personal hygiene," she noted.
In hot weather, the ingredients themselves pose a danger — for example, mayonnaise-based sauces and undercooked meat, especially chicken.
"Shawarma that does not meet hygiene standards and storage conditions can become a source of salmonella, dysentery, and other acute intestinal infections," emphasized Dyakova.
To reduce risks, Rospotrebnadzor recommends buying shawarma from verified places, paying attention to the appearance of the establishment, the availability of personal protective equipment for staff, and product labeling.
