The gastroenterologist Prikazchikov explained whether cuts on a cutting board are dangerous.
On June 15, 2026, at 16:01 Society Many people think that if a plastic cutting board has deep knife cuts, washing it is useless because bacteria firmly settle in these scratches and are resistant to cleaning agents. However, gastroenterologist and co-founder of the Academy of Neurogastroenterology Alexander Prikazchikov dispelled these concerns in a conversation with 360.ru. According to the specialist, the risk of infection from such a board is actually minimal. Of course, over several years of use, it can accumulate something, but the question is about concentration. The board is still washed, everything is rinsed off and disinfected. "The risk is certainly there, but it is very small - getting infected from a poorly washed fruit or vegetable is much easier than from a cutting board," the doctor explained. The main danger lies not in the old board with cuts, but in using the same knife and board for different types of products. This can lead to the transfer of bacteria, such as salmonella and E. coli, from raw products to those that will not be subjected to heat treatment. "A person cuts raw fish or meat, and then with the same knife - cheese, sausage, or fruits. Here he can transfer any bacteria from one product to another. This can simply be avoided if there is a separate board for each type of product," the doctor advised. The gastroenterologist also refuted concerns related to possible food contamination with microplastics from plastic cutting boards. He emphasized that there is no documentary evidence that this is harmful to the body. Cases of illness caused by microplastics have also not been recorded. "That it may harm the body has not been proven, not at all," noted Prikazchikov. NIA "Nizhny Novgorod" has channels on Telegram and MAX.
