Every year on May 21, the International Tea Day is celebrated. The Federal Service for Surveillance on Consumer Rights Protection and Human Wellbeing (Rospotrebnadzor) provides recommendations for choosing this beverage and also discusses its benefits for the body. There are six main types of tea depending on the degree of fermentation: black, green, pu-erh, white, oolong, and yellow. Additionally, tea is classified by processing methods into loose leaf, pressed, and instant.
Tea has high biological and nutritional value due to catechins, caffeine, L-theanine, tannins, and theaflavins. The complex effects of these components provide antioxidant, anti-inflammatory, and antimicrobial benefits. When purchasing tea, one should first pay attention to the integrity of the packaging – it should be undamaged and made from materials approved for contact with food products. The labeling must include the product name, ingredients, manufacturer’s address, packaging date, weight, storage conditions, and expiration date.
Tea leaves should be uniform in color and size. There should be no broken leaves, stems, or foreign inclusions. A "rusty" or brown tint in dry black tea indicates average quality, and the presence of tea dust or gray color is unacceptable.
To maximize the preservation of the flavor and biologically active substances in tea, proper brewing is essential, which varies depending on the type of tea. Fermented types of tea (black, pu-erh, oolong) are best brewed with water at around 90 degrees Celsius. For green and white tea, the water temperature should not exceed 75–80 degrees Celsius. Using boiling water for brewing risks producing an excessively bitter beverage with low flavor quality.
It is not recommended to use strong tea brewed for several days by diluting it with boiling water. Such a drink not only loses its aroma and antioxidant properties but also becomes a nutrient medium for bacteria. The most flavorful and beneficial tea will only be freshly brewed. Tea is best stored in a dark, dry, and cool place.
